Macaroni & Cheese
This I am sure is the
world’s favourite comfort food and if one is really a cheese lover, this is an
absolute delight. When we say mac & cheese, we are talking loads of cheese.
As in for a hundred grams of macaroni you need to add a hundred grams of cheese.
Do not compromise on the quality of the cheese. Use the best quality Parmesan
that you can lay your hands. Also, this dish is quite heavy, so the quantity
that you see can actually feed two.
Ingredients:
100 gms macaroni
100 gms grated parmesan
cheese
50 gms butter
3 tbsp of plain flour
½ ltr regular milk
1 tsbp mustard
1 tbsp Worcestershire sauce
1 tsp black pepper
Salt to taste
Method:
1. Boil the macaroni and
set it aside.
2. Heat the pan, add butter
and let it melt.
3. Add the flour to this
and start stirring quickly making sure there are no lumps as this forms the
base of the sauce.
4. Once the flour has mixed
well and a thin base is formed, add mustard and mix well. Again stirring constantly
making sure no lumps are formed.
5. To this mixture, add
milk and keep stirring constantly till you get the sauce like consistency.
6. To this add the Worcestershire
sauce, salt and pepper and stir well. Let the sauce simmer for about 6-7
minutes.
7. Now add the grated Parmesan and mix well in the sauce. Leave some for the topping.
8. Once the sauce is
nearly done, place the macaroni in a baking dish and pour over the entire sauce
making sure all the little macaroni gets coated with it.
9. Sprinkle the remaining
cheese on top of this and put it in the oven for about 30 minutes 180 ºC.
